A delicious and spicy chicken sandwich made with crispy chicken thighs and served on a brioche bun with pickle slices.
Mix buttermilk, paprika, cayenne, and salt pepper garlic rub in a bowl. Add the chicken and marinate until you lose patience.
When your chicken is done marinating, in a separate bowl, mix together the flour, paprika, cayenne pepper, and Salt Pepper Garlic Rub.
Remove the chicken thighs from the buttermilk and dredge them in the flour mixture, making sure to coat them evenly.
Heat oil in a deep skillet or pot over medium-high heat until it reaches 325-350°F. Fry the chicken thighs until they are golden brown and cooked through, about 5 minutes per side. Remove from the oil and place on a wired rack when done.
When the chicken is halfway done, preheat a pan to medium heat and add butter. Toast your bun until golden brown.
In a small bowl, mix together all the seasonings used in previous mixtures, and brown sugar. Add hot oil and whisk.
Place the finished fried chicken in the mixture and coat on each side.
Assemble the sandwich by adding the spicy mayo to the top and bottom of the bun. Add the fried chicken and top with pickle slices and cover with the top half of the brioche bun. Enjoy!
