Steak and Mashed Potatoes

Take the steak out to rest in room temperature for 30-45 minutes.
While it is resting, wash and peel the potatoes. Cut into large cubes and place in a pot of water.
Put it on the stove on medium-high heat for 12 minutes or until fork tender and drain the water.
After draining, put the lid back on to let them steam for 5-7 minutes.
While the potatoes are steaming, put a small pot on medium heat, and melted 2 TBSP of butter. Add the heavy cream and mix, add a pinch of salt and cook on medium to low heat for 5 minutes to warm it up.
Once this is complete, add the potatoes to a ricer and press down to rice the potatoes. Next, pour the heavy cream and butter mixture in as needed and start mashing the potatoes using a spatula. Add the lid back when done.
Trim the asparagus and place them on a baking sheet. Add oil and salt and mix together to fully coat. Add to the oven at 350 degrees Fahrenheit just before putting your steak on. Cooking for 15 minutes.
While the potatoes are cooking, pat the steak dry with a paper towel and season generously with salt and pepper. Preheat a cast iron or stainless steel pan to medium-high heat.
Once the pan is very hot, add oil to the pan. Wait for the oil to heat up, then gently place the steak in the pan. Cook for 2 1/2 minutes on each side.
