Buffalo Chicken Sandwich Recipe

A buffalo chicken sandwich with mozzarella cheese.

Pat dry and trim the excess fat off the boneless skinless chicken thighs. Add the chicken thighs to a bowl and pour a TBSP of oil, along with the seasonings in the ingredients list and mix.
Preheat a cast iron, or stainless steel pan to medium heat. Add oil to the pan when it is preheated, and add the seasoned chicken thighs to the pan.
Cook the chicken for 6-8 minutes on one side depending on thickness of the chicken, then flip and cook for another 6 minutes until they reach 165 degrees Fahrenheit. Set aside when done.
While the chicken is cooking, preheat a pan to medium heat, and add butter to toast the bread. Place the bread down and toast until lightly golden brown and set aside.
In a small bowl, add the 2 TBSP of mayo and 1 TBSP of hot sauce with black pepper and mix for the sandwich spread.
Once the chicken is done cooking, turn the heat down to low, remove the excess oil from the pan with a paper towel and add in the 1/2 cup of hot sauce. Stir in 3 TBSP of butter and whisk it in. Finally add in the honey and whisk.
Assemble the sandwiches by adding the spicy mayo to the bottom and top portion of the sub roll followed by the chicken and mozzarella cheese. Place the sandwich in the oven on broil to melt the cheese for 1-3 minutes. (Watch carefully as a broiler gets very hot very fast).
Finish the sandwich by adding the top buns, slice in half and serve immediately.
