Spicy Chicken Sandwich Recipe

A spicy chicken sandwich with seared chicken thighs, caramelized onions, provolone cheese, and arugula.
Pat the chicken dry and season with oil, salt, pepper, paprika, cayenne pepper, and chipotle sauce. Let it marinate while prepping everything else.
Preheat a pan to medium heat. While it is preheating, slice the onion. Add oil to the pan and place the onions in it with a pinch of salt.
Cook for 2 minutes before lowering the heat to low and stir occasionally. Cook for 30 more minutes at least, or until brown and caramelized.
While the onions are cooking, add 2 TBSP of Mayo to a bowl with 1 TBSP of Chipotle sauce and a dash of black pepper. Mix well and set aside.
After the onions have cooked for 15 minutes or so, preheat a pan to medium heat. Add oil to the pan and place the chicken in the pan when the oil gets hot enough. Cook for 6 minutes on each side or until it reaches 165 degrees Fahrenheit.
While that is cooking, toast the bread by slicing it in half and adding butter to a preheated pan. Place the bread in the pan and cook until golden brown.
Assemble the sandwich by adding the spicy mayo to the bottom and top part of the roll, then add the chicken. Next, add the cheese on top of the chicken and place the sandwich on a wired rack and into the oven on broil for 1-2 minutes until the cheese is melted.
Take it out of the oven and add the caramelized onions, arugula, and the top part of the roll.
