A classic BLT sandwich with chicken thighs and provolone cheese

Preheat the oven to 350 degrees. Add bacon to a baking sheet and place in the oven until preferred doneness.
Season the chicken with salt, black pepper, paprika, chipotle chili powder, and oil.
Preheat a pan to medium heat. Add oil and place the chicken in the pan. Cook for 6 minutes a side. Set aside when done.
Slice the sub roll in half and spread butter on both sides. Toast it in a pan until golden brown.
In a small bowl, mix mayo and sriracha to make the spicy mayo sauce.
Spread the spicy mayo sauce on the toasted sub roll.
Add the bacon, then chicken, then the cheese. Place in the oven on a wired rack on broil for 2-3 minutes to melt the cheese.
Place the lettuce and sliced tomato and top bun and enjoy.
