A chicken philly sub with carmelized onions, bell peppers, and provolone cheese

Slice an onion and bell peppers. Preheat a pan to medium heat. Add oil to the pan and the onions.
Add salt to taste and stir the onions. Cook for 2 minutes on medium heat, stirring occasionally, then lower the heat to low.
Cook for 7-10 more minutes, then add in the bell peppers. Cook for 25 minutes, stirring occasionally, or until desired caramelization.
While the onions and peppers are cooking, slice the chicken thighs thinly and add them to a bowl. Add oil, salt, cayenne, and paprika and mix well.
When the onions are about 10 minutes before being done, preheat a pan to medium-high heat. Add oil to the pan and the chicken when the oil is heated.
Let the chicken cook for 2 minutes before touching and then flip and toss with a spatula to ensure every piece gets cooked. Cook for another 2 minutes or until it reaches 165 degrees fahrenheit.
Add the provolone to the chicken and cut the heat. Add in the bell peppers and onions and mix it until everything is evenly combined.
Slice the sub roll and add in the chicken and cut in half. Enjoy.
