Pasta Alla Vodka Bake

Rigatoni pasta with a vodka sauce and melted cheese on top

Fill a pot with water and bring to a boil.
Add the pasta to the boiling water with salt to taste. Set aside when done.
Preheat a pan to low-medium heat. Add butter to the pan to melt. Add the 2 cloves of garlic mined to the pan. Cook for 30 seconds then add the tomato paste straight to the pan.
Cook the tomato paste for 3-4 minutes to remove the bitterness. Add the vodka to the pan and whisk.
Cook off the alcohol for 2 minutes then add the heavy cream. Whisk everything together and add the red pepper flakes.
Cook for 4-5 more minutes and turn the heat off. Add fresh parmesan cheese and whisk. Place the pasta in the sauce.
Toss the pasta in the sauce to coat. Place the pasta in a small baking dish. Add parmesan cheese and mozzarella on top and place in the oven to broil.
Broil for 3 minutes or until lightly golden brown and melted.
Garnish with parsley and enjoy.
