Crispy Potato Balls Recipe

Fried Potatoes formed into balls

Preheat the oven to 400 degrees Fahrenheit.
Clean the potatoes and stab 4-5 holes into them with a fork or knife to make sure they do not explode in the oven. Place them on a baking sheet and add them to the oven for 1 hour.
Let them cool slightly for 5-10 minutes after. Peel the potatoes and run them through a ricer. Let them cool for another 10 minutes.
Once they are cooled, add corn starch, salt, pepper, and parm cheese and mix it all together with your hands until all the ingredients are combined and it is formed into one big ball.
Portion them out evenly and form into small 1 inch balls.
Preheat a pot with oil on medium-high heat. Fry the balls at 350 degrees Fahrenheit and cook for 5 minutes each. (If you notice one of them oozing out potatoes in a string like way, immediately take that one out or it will explode)
Remove and place in a bowl. Add salt, Parmesan Cheese, and parsley and enjoy.
