Chicken with a romano cheese crust and fresh lemon juice

1 Start by butterflying the chicken breast and pounding them out until thin. 2 Pat dry the chicken with a paper towel and lightly add some salt to the chicken. 3 Grate the romano cheese very finely and place in a dish. 4 Preheat a pan to medium-high heat. 5 While that is preheating, add 3 eggs to another dish for the egg wash, and scramble them up. 6 Dip the chicken into the cheese, and be sure to have it covered in the cheese completely. 7 Dip the chicken into the egg wash. (If the cheese did not stick to the chicken before adding it to the egg wash, then dip it back into the cheese, then back into the egg wash one more time). 8 Add oil to the pan and let it come up to temp. Carefully place the chicken into the pan for a low fry. Cook for 2-3 minutes on each side then remove from the pan. 9 Add salt, and freshly squeezed lemon juice to the chicken.
