1 Butterfly your chicken and pound it into thin slices. 2 In a prep tray, add flour, Salt, Black Pepper, Paprika, and Italian Seasoning and coat the chicken breast on each side. 3 Heat oil in a pan over medium heat. Cook the chicken breast for 2-3 minutes on each side or until golden brown and cooked through. Remove the chicken and set aside. 4 In the same pan you cooked your chicken, add some butter to the pan with the minced garlic and cook until you can smell the garlic, about 30 seconds. Add heavy cream, Italian seasoning, oregano, red pepper flakes, and black pepper and stir. Add the sun-dried tomatoes. 5 Let the sauce cook on low for about 4 minutes stirring occasionally. As it starts to thicken, turn off the heat and add your parmesan cheese to the sauce. 6 Once the sauce is perfect, add the cooked chicken and coat the chicken with the sauce. 7 While the sauce is cooking, grab the sub roll or baguette and toast it in a pan with butter on medium heat. 8 To assemble the sandwich, grab a spoonful of the sauce and spread it on the bottom part of the bun. Add the chicken, then add the sauce with the sun-dried tomatoes on top. 9 Garnish the top of the chicken with freshly grated parmesan cheese and parsley and add the top bun.
