Rigatoni pasta with a vodka sauce and melted cheese on top

What you need

1 bunch fresh parsley

2 tsp red pepper flake

2 clove garlic clove

½ cup grated parmesan cheese

6 oz rigatoni pasta

4 tbsp tomato paste

2 tbsp unsalted butter

3 tbsp vodka

1 cup heavy cream

1 tsp salt
Instructions
1 Fill a pot with water and bring to a boil. 2 Add the pasta to the boiling water with salt to taste. Set aside when done. 3 Preheat a pan to low-medium heat. Add butter to the pan to melt. Add the 2 cloves of garlic mined to the pan. Cook for 30 seconds then add the tomato paste straight to the pan. 4 Cook the tomato paste for 3-4 minutes to remove the bitterness. Add the vodka to the pan and whisk. 5 Cook off the alcohol for 2 minutes then add the heavy cream. Whisk everything together and add the red pepper flakes. 6 Cook for 4-5 more minutes and turn the heat off. Add fresh parmesan cheese and whisk. Place the pasta in the sauce. 7 Toss the pasta in the sauce to coat. Place the pasta in a small baking dish. Add parmesan cheese and mozzarella on top and place in the oven to broil. 8 Broil for 3 minutes or until lightly golden brown and melted. 9 Garnish with parsley and enjoy.View original recipe
