1 Preheat the oven to 425 degrees fahrenheit. Peel and cut the potatoes into large cubes. 2 Add the potatoes to a pot with cold water and add 2 big pinches of salt. 3 Put on the stove at medium-high heat and cook for about 10-12 minutes until fork tender. 4 Drain the water and add the potatoes back into the pot for 3-5 minutes with the lid on to steam. 5 While the potatoes are steaming, grab a baking dish and cover the bottom with oil and place in the oven to heat up. 6 Once heated, add the potatoes to it and place in the oven for 50 minutes. Flip after 30 minutes goes by. 7 Take the potatoes out and place them in a bowl. Add salt, pepper, and parsley. Toss to coat and enjoy.View original recipe
