0 Take the steak out to rest in room temperature for 30-45 minutes. 1 While it is resting, wash and peel the potatoes. Cut into large cubes and place in a pot of water. 2 Put it on the stove on medium-high heat for 12 minutes or until fork tender and drain the water. 3 After draining, put the lid back on to let them steam for 5-7 minutes. 4 While the potatoes are steaming, put a small pot on medium heat, and melted 2 TBSP of butter. Add the heavy cream and mix, add a pinch of salt and cook on medium to low heat for 5 minutes to warm it up. 5 Once this is complete, add the potatoes to a ricer and press down to rice the potatoes. Next, pour the heavy cream and butter mixture in as needed and start mashing the potatoes using a spatula. Add the lid back when done. 6 Trim the asparagus and place them on a baking sheet. Add oil and salt and mix together to fully coat. Add to the oven at 350 degrees Fahrenheit just before putting your steak on. Cooking for 15 minutes. 7 While the potatoes are cooking, pat the steak dry with a paper towel and season generously with salt and pepper. Preheat a cast iron or stainless steel pan to medium-high heat. 8 Once the pan is very hot, add oil to the pan. Wait for the oil to heat up, then gently place the steak in the pan.
