What you need
1 tbsp oil

1 tbsp salt

1 tsp cayenne pepper

1 tsp paprika

1 tsp black pepper

5 ⅓ oz mexican cheese

1 onion
Instructions
1 Start by slicing an onion and both bell peppers. Preheat a pan to medium heat when done. 2 Add oil to the pan and add the onions with a pinch of salt. Cook and stir on medium heat for 2-3 minutes then lower the heat to low. 3 Let the onions cook and soften before adding the sliced bell peppers (About 10 minutes total). Stir everything occasionally. 4 While that is cooking, prepare the chicken by adding it to a bowl and seasoning it with salt, black pepper, cayenne powder, paprika, and a little bit of oil. Mix it together ensuring even coating. 5 Preheat a pan to medium heat. Once preheated, add oil to the pan and allow it to come up to temperature. Place the chicken in the pan and cook for 5-6 minutes on each side depending on size or cook until it reaches 165 degrees fahrenheit. Set aside and let rest for 3-5 minutes. 6 While that is resting, preheat another pan to medium heat. Add a drop of oil to the pan, along with the tortilla wrap. Slice the chicken into thin pieces. 7 Add a layer of cheese to one side of the wrap, followed by the chicken and caramelized onions and peppers, and another layer of cheese. Fold the other side over to form the quesadilla and push it down. Cook on that side for 4 minutes or until golden and crispy, then flip and cook for another 3 minutes. 8 Take it off the pan when it's golden brown and crispy and slice into desired pieces.
